When bread is baked, heat and moisture gelatinize its starch, making much of it easier for digestive enzymes to break down. As the bread cools, some starch molecules reorganize into tighter crystalline structures through a process called retrogradation.
A portion of this “retrograded starch” can resist digestion in the small intestine and behave more like fiber, potentially slowing the release of glucose into the bloodstream. Freezing, thawing and toasting may encourage these structural changes.
In a small 2008 study involving just 10 healthy adults, homemade white bread that had been frozen and defrosted produced approximately 31% less total blood-glucose response over two hours than the same bread served fresh. When the frozen and defrosted bread was also toasted, the measured response was about 39% lower.
That 39% figure is important—but it is often misrepresented online. It referred to the two-hour incremental area under the glucose curve after eating frozen, thawed and toasted homemade bread. It did not mean that freezing alone reduced the peak blood-sugar “spike” by exactly 39%.
Results also differed between homemade and commercially produced bread, showing that ingredients, manufacturing, storage and preparation can influence the effect. Individual responses may vary as well, particularly among people with insulin resistance or diabetes.
Freezing sliced bread and toasting it later may therefore be a useful small adjustment. However, bread type, serving size and what accompanies it still matter more. Whole-grain or minimally processed bread eaten with protein, healthy fat or fiber will generally provide a more balanced meal than relying on freezing alone
