Ingredients
Chicken
2 chicken breasts
2 tbsp olive oil
2 garlic cloves, minced
1 tsp smoked paprika
½ tsp onion powder
½ tsp oregano
Salt and pepper
Salad
5 cups chopped romaine lettuce
1 cucumber, sliced
1 ripe avocado (half sliced, half mashed)
1 cup sweet corn
1 cup cherry tomatoes, halved
Crushed red pepper flakes
Dressing
2 tbsp lime juice
2 tbsp olive oil
1 garlic clove, grated
Salt and pepper
Instructions
Mix the seasonings with olive oil and coat the chicken. Marinate for about 20 minutes.
Grill the chicken until golden and fully cooked, then let it rest before slicing.
Stir together the dressing ingredients until smooth.
Fill bowls with chopped romaine.
Arrange the cucumber, avocado, mashed avocado, corn, and tomatoes neatly around the bowl.
Add the sliced chicken.
Finish with the dressing and a pinch of crushed red pepper
