Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes, sliced
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 tablespoon butter
- Fresh basil or spinach leaves, for garnish

- Season the chicken: Pat the chicken breasts dry and season both sides with salt, black pepper, paprika, and Italian seasoning.
- Sear the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes per side, until golden brown. Remove and set aside.
- Make the sauce: In the same skillet, add the butter and minced garlic. Cook for about 30 seconds until fragrant.
- Add the chicken broth and scrape the bottom of the skillet to release all those flavorful browned bits.
- Pour in the heavy cream and add the Parmesan cheese. Stir until the sauce becomes smooth and creamy.
- Add the vegetables: Stir in the spinach and sun-dried tomatoes. Cook for 2–3 minutes until the spinach wilts and the sauce thickens slightly.
- Return the chicken: Place the chicken breasts back into the creamy sauce and spoon some sauce over the top.
- Cover and simmer over low heat for about 8–10 minutes, or until the chicken is fully cooked and reaches 165°F (74°C) internally.
- Garnish: Sprinkle with fresh spinach or basil and a little extra Parmesan.
- Serve immediately with pasta, rice, mashed potatoes, or crusty bread to soak up the delicious creamy sauce. š
