Ingredients

1 can (15 ounces) mandarin oranges, well drained

2 cups mini marshmallows
1 cup sweetened shredded coconut
1 cup sour cream

Directions

1. Drain the mandarin oranges very well, then gently pat them dry with paper towels so the salad stays thick and creamy instead of watery.

2. In a large mixing bowl, combine the sour cream, mini marshmallows, and shredded coconut, stirring until everything is evenly coated.

3. Fold in the mandarin oranges carefully so the segments stay mostly whole and the mixture remains light and fluffy.

4. Cover and refrigerate for at least 1 hour before serving to let the flavors blend and the marshmallows soften slightly, then transfer to a serving bowl if desired.
