Ingredients
Meatloaf
2 lbs ground beef (80–85% lean)
1 cup breadcrumbs
2 large eggs
1 medium onion, finely diced
3 cloves garlic, minced
½ cup milk
2 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried parsley
½ tsp dried thyme (optional)
Glaze
½ cup ketchup
2 tbsp brown sugar
1 tbsp yellow mustard
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic, milk, Worcestershire sauce, salt, pepper, parsley, and thyme.
Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.
Shape the mixture into a loaf and place it in a lightly greased loaf pan or on a baking sheet.
In a small bowl, mix the ketchup, brown sugar, and mustard. Spread half of the glaze over the top.
Bake for 45 minutes.
Remove from the oven, spread the remaining glaze on top, and return to the oven for 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.

Tips
For extra moisture, substitute half the beef with ground pork.
Add ½ cup finely chopped bell pepper or shredded carrot for extra flavor and nutrition.
Leftover meatloaf makes excellent sandwiches the next day.
