With oatmeal cookie dough for the crust and topping, plus a quick chocolate filling made from sweetened condensed milk and chocolate chips, you get a pan of rich, chewy bars that taste far more fussed-over than they really are.

Serve these bars cut into small squares with a pot of coffee, a glass of cold milk, or a scoop of vanilla ice cream if you want to dress them up a bit. They travel well for potlucks and cookouts, and they fit right in beside fresh berries, sliced melon, or a simple bowl of whipped cream for a laid-back dessert table.

Ingredients

1 package oatmeal cookie dough, about 16 to 18 ounces

1 can sweetened condensed milk, 14 ounces
2 cups semi-sweet chocolate chips

Directions

1. Preheat the oven to 350°F and lightly grease an 8x8-inch glass baking dish.

2. Press about two-thirds of the oatmeal cookie dough evenly into the bottom of the prepared dish to form a crust.

3. In a saucepan over low heat, stir the sweetened condensed milk and chocolate chips until melted and smooth.

4. Pour the chocolate mixture over the crust and spread it gently into an even layer.

5. Crumble the remaining oatmeal cookie dough over the top of the chocolate layer.

6. Bake for 25 to 30 minutes, until the top is golden brown and the filling is set around the edges.

7. Cool completely before slicing into bars and serving.

Variations & Tips

Pan Lining Tip: If you want the bars to lift out neatly, line the dish with parchment paper before pressing in the crust. It makes slicing much easier once the bars have cooled.

Chocolate Choice: Semi-sweet chips keep the sweetness balanced, but you can use dark chocolate chips for a deeper flavor or milk chocolate chips for a softer, sweeter filling.
