Instructions:
1. Prep the Ingredients: Start by ensuring the sauerkraut is well-drained and rinsed to reduce saltiness. Pat dry with a kitchen towel if necessary. Set aside.
2. Assemble the Rolls: Lay one tortilla flat on a clean surface. Spread 1/2 tablespoon of Dijon mustard evenly across the tortilla, avoiding the edges. Layer with a quarter of the pastrami, followed by 1/4 cup of drained sauerkraut, and top with 1/4 cup shredded Swiss cheese.
3. Roll It Up: Starting from one end, tightly roll the tortilla away from you, ensuring all the fillings are secure. Repeat this process with the remaining tortillas.
4. Toast the Rolls: In a large skillet, heat the olive oil and butter over medium heat. Once hot, place the rolls seam-side down in the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy. If needed, press down gently with a spatula for even browning.
5. Slice and Serve: Once toasted, remove from the skillet and let cool for a minute. Slice each roll into bite-sized pieces or halves, and sprinkle with freshly ground black pepper and herbs if using.
