* 8 slices thick white bread or brioche
* 3 large eggs
* 1 cup milk
* 1 tbsp sugar

Instructions
1. In a bowl, whisk together eggs, milk, sugar, vanilla, and cinnamon.

* 2 cups buttermilk (or 2 cups milk + 2 tbsp vinegar)

* ¼ cup melted butter

Instructions
1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla.
3. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
4. Let the batter rest for 5–10 minutes.
5. Heat a lightly greased non-stick pan or griddle over medium heat.
6. Pour about ¼ cup batter per pancake.

Ingredients (2 Sandwiches)
For the Waffles
* 1 cup all-purpose flour
* 1 tbsp sugar
* 1 tsp baking powder
* ¼ tsp salt
* 1 egg
* ¾ cup milk
* 2 tbsp melted butter
Filling
* 4 slices ham
* 4 slices mozzarella cheese (or quick-melt cheese)
* 1 tbsp butter
* Black pepper to taste
Instructions
Make the Waffles
1. In a bowl, mix flour, sugar, baking powder, and salt.
2. Add egg, milk, and melted butter. Mix until smooth.
3. Pour batter into a preheated waffle maker.
4. Cook until golden brown and crisp.
Prepare the Filling
1. Heat a pan over medium heat.

* ½ cup brown sugar
* 1 tbsp ground cinnamon
Egg Mixture
* 2 eggs
* ¼ cup milk
* 1 tsp vanilla extract
For Frying
* 2 tbsp butter
Cream Cheese Glaze
* 4 oz (115 g) cream cheese, softened
* ½ cup powdered sugar
* 2–3 tbsp milk
* ½ tsp vanilla extract
Instructions
1. Trim the crusts from the bread slices and flatten each slice with a rolling pin.
2. Mix cream cheese and powdered sugar until smooth.
3. Spread a thin layer of the cream cheese mixture on each slice.
4. Roll the bread tightly and set aside.
5. In a shallow bowl, whisk together eggs, milk, and vanilla.
6. Combine brown sugar and cinnamon in another bowl.
7. Dip each roll-up into the egg mixture.
8. Melt butter in a skillet over medium heat.
9. Cook the roll-ups, turning frequently, until golden brown on all sides.
10. Roll them immediately in the cinnamon-sugar mixture.
Make the Glaze
1. Beat cream cheese until smooth.
2. Add powdered sugar, vanilla, and milk.
3. Mix until thick but pourable.
