🥕 For the Carrot Cake
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon

- 3 large eggs

- ½ cup brown sugar
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1 cup chopped walnuts or pecans

- 250 g (8 oz) cream cheese, softened
- ½ cup unsalted butter, softened
- 2½ cups powdered sugar
- 1 tsp vanilla extract

- Chopped walnuts or pecans
- Freshly grated carrot
- A sprinkle of cinnamon (optional)
Instructions
- Preheat the oven to 175°C (350°F) and grease a loaf pan.
- In a bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the eggs, sugars, oil, and vanilla.
- Gradually combine the wet and dry ingredients.
- Fold in the grated carrots, walnuts, and raisins.
- Pour the batter into the loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely.
- Beat the cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread the frosting over the cooled cake and garnish with chopped walnuts and grated carrots.
