Creamy Herb Turkey Breast with Crispy Diced Potatoes

Ingredients

For the Turkey Breast:

  • 1 lb (500 g) turkey breast
  • 2 tbsp butter or olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried thyme

For the Creamy Herb Sauce:

  • 1 cup (200 ml) heavy cream
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard (optional)
  • 1 tsp dried oregano or Italian herbs
  • Salt and black pepper, to taste

For the Crispy Potatoes:

  • 3 medium potatoes, diced into small cubes
  • 2 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the turkey breast with salt, pepper, garlic powder, paprika, and thyme.
  2. Heat the butter or olive oil in a skillet over medium-high heat. Sear the turkey until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Let it rest for 5 minutes, then slice.
  3. Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and pepper. Roast in a 400°F (200°C) oven for 30–35 minutes, or pan-fry until crispy and golden. Sprinkle with chopped parsley.
  4. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds. Add the heavy cream, Dijon mustard (if using), herbs, salt, and pepper. Simmer for 3–5 minutes until the sauce thickens.
  5. Arrange the sliced turkey on a serving plate, spoon the creamy herb sauce over the top, and serve with the crispy potatoes.

Serving Suggestion: Pair with steamed vegetables or a fresh green salad for a complete, restaurant-style meal.
