Gather these simple ingredients:
My neighbor, Ellie, brought me delicious Santa Teresa Femminello Lemons from San Diego, so this is what we made with fresh lemons!
How do you make cucumber bites?
- In a small bowl, combine softened cream cheese, fresh dill, lemon zest, and lemon juice. Stir and add salt and pepper to taste.
- Prepare bread slices on a platter. Evenly spread the cream cheese mixture onto each slice. Place cucumber slices on top.
- When ready to serve, lightly sprinkle the bites with pepper and more lemon zest.
- Optional to add a few sprinkles of fresh chopped dill.
Tips and substitutions:
- Optional to use a sharp knife to peel alternating strips of skin from the cucumber.
- You can use “light” cream cheese.
- Swap out the dill for basil. You’ll be surprised at how fresh and tasty these cucumber bites are with basil.
- Use any bread or crackers (but crackers tend to get soggy quicker).
- For a different flavor, use lime instead of lemon.
- Make ahead (up to 4 hours) for any party.
- Double or trip the recipe for a large party. Serve on The Big Board or a large plate or platter.
