I am a believer that you can never have too many dip recipes. Especially when it comes to really easy recipes.
This Feta and Roasted Red Pepper Dip is a super easy Greek dip, also known as Htipiti. This version is super, super simple, only containing 2 ingredients. This is how I’ve always made it. I have seen other recipes that incorporate spices or olive oil or garlic. And you can’t go wrong with those additions, but really, the two ingredients make a pretty perfect dip, in my opinion!
Ingredients
Roasted Red Peppers: You can make this with jarred red peppers, or you can roast you own. Roasting peppers isn’t really hard, but it will take some extra time. I usually just use jarred peppers for this. If you are using jarred, a 12 oz jar will usually contain about 2 whole peppers.
Feta: You want to make sure you are using a brick of feta for this, not crumbled feta. The flavor and texture will be much better with a good quality block of cheese.

How to Make Feta and Roasted Red Pepper Dip
STEP 1: Combine the roasted red peppers and the feta in a food processor.
STEP 2: Process together until smooth. If needed, scrape the sides of the food processor down to make sure everything is blended together.

Tips and Tricks
You can serve this right away, but I prefer it after it’s been refrigerated for a couple of hours. It will thicken up slightly, and the flavors will really meld together.
We love to serve this with vegetables, crackers, and naan bread or sliced pitas.
The feta that you use will affect the flavor. I made this 2 times in a row with 2 different brands of feta. One had a stronger goat cheese flavor, and the other was more mild. Make sure you are using a feta that you know you love.
