Ingredients:
1.5 lbs beef chuck, cut into 1-inch cubes
1 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 tsp dried thyme
1/2 tsp dried rosemary
1 bay leaf
1.5 cups barley, rinsed
8 cups beef broth
1 cup water
1 tbsp Worcestershire sauce
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Season beef with salt and pepper.
2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, ensuring not to overcrowd the pot. Remove beef and set aside.
3. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
4. Add garlic, thyme, and rosemary and cook for 1 minute more, until fragrant.
5. Return beef to the pot. Add barley, beef broth, water, and Worcestershire sauce.
6. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until beef is tender and barley is cooked through.
7. Remove bay leaf before serving.
8. Adjust seasoning with salt and pepper to taste.
9. Garnish with fresh parsley.
