Spicy Pineapple Cilantro Chicken Wings

Ingredients:
2 lbs chicken wings
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
For the Marinade & Sauce:
1 cup pineapple juice
½ cup fresh pineapple, crushed
3 tablespoons soy sauce
2 tablespoons sriracha (or more, to taste)
1 tablespoon honey
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 teaspoon garlic powder
½ teaspoon ginger powder
Instructions:
1. Preheat oven to 400°F (200°C).
2. Pat chicken wings dry with paper towels.
3. In a large bowl, toss chicken wings with olive oil, salt, and pepper.
4. In a separate bowl, combine pineapple juice, crushed pineapple, soy sauce, sriracha, honey, lime juice, cilantro, garlic powder, and ginger powder.
5. Add chicken wings to the marinade and toss to coat evenly.
6. Cover the bowl and refrigerate for at least 1 hour, or up to 4 hours.
7. Place chicken wings on a baking sheet lined with parchment paper.
8. Bake for 35 minutes, flipping halfway through, until cooked through and crispy.
9. Let wings rest for 5 minutes before serving.

Tips:
For extra crispy wings, increase the oven temperature to 425°F (220°C) for the last 5-10 minutes of cooking.
