Waffle Ice Cream Tacos

Ingredients:

For the mini waffle shells:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/4 cup unsalted butter, melted
1 cup milk
1 egg
1 teaspoon vanilla extract
Confectioners’  sugar, for dusting

1 1/2 quarts ice cream (any flavor, but we recommend vanilla, chocolate, or strawberry)

For the chocolate dipping:
1 cup semisweet chocolate chips
1 tablespoon shortening (like Crisco)

For the toppings:
Chopped nuts (walnuts, almonds, or pecans)
Sprinkles
Whipped cream
Fresh fruit (strawberries, blueberries, or raspberries)
Candy pieces (M&M’s, chopped peanut butter cups, or chopped candy bars)

Instructions:

1. Preheat the waffle iron according to the manufacturer’s instructions.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, whisk together the melted butter, milk, egg, and vanilla extract.
4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
5. The batter should still be slightly lumpy.
6. Using a 1/4 cup measuring cup, scoop the batter onto the center of the waffle iron.
7. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
8. Repeat with the remaining batter, greasing the waffle iron with cooking spray as needed.
9. Once the waffles are cool, use a jumbo cookie scoop or a measuring cup to form the waffles into mini shells.
10. Dip the edges of the waffles in the melted chocolate, then place on a parchment-lined baking sheet.
11. Freeze the waffles for at least 10 minutes.
12. Scoop the ice cream into the mini waffle shells.
13. Top with your desired toppings.
14. Drizzle with any additional toppings, such as caramel or hot fudge.
