Ingredients
For the Chicken
4 chicken breast fillets (6–7 oz / 180–200 g each)
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp Italian seasoning
Salt & freshly ground black pepper
For the Creamy Mushroom Sauce
8 oz (250 g) mushrooms, sliced
1 small onion, finely diced
2 garlic cloves, minced
1 tbsp butter
1 cup (250 ml) heavy cream
⅔ cup (150 ml) chicken broth
1 tsp Dijon mustard
1 tsp cornstarch (optional, for thickening)
2 tbsp chopped fresh parsley

250 g mixed vegetables (peas, carrots & corn)
Fresh lettuce, cucumber & tomatoes
Instructions
Preheat your oven to 400°F (200°C). Bake the fries according to the package instructions until crispy and golden.
Rub the chicken with olive oil, paprika, garlic powder, Italian seasoning, salt, and pepper.
Heat a skillet over medium-high heat and cook the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove and let rest.
In the same skillet, melt the butter. Sauté the onion and garlic until fragrant.
Add the mushrooms and cook for about 5 minutes until browned.
Pour in the chicken broth, then stir in the heavy cream and Dijon mustard. Simmer gently for 5 minutes. Add cornstarch if you'd like a thicker sauce.
Cook the mixed vegetables according to the package directions or sauté briefly in butter.
Serve the chicken topped with the creamy mushroom sauce alongside crispy fries, vegetables, and a fresh salad. Sprinkle with chopped parsley and enjoy!
