Beef Phaal Curry
2½ lbs (1.1 kg) beef chuck or stewing beef, cut into large cubes
3 tbsp vegetable oil or ghee
2 large onions, finely sliced
5 garlic cloves, minced
2 tbsp fresh ginger, grated
2–4 fresh red chilies, finely chopped (adjust heat level

2 tbsp tomato paste
2 cups crushed tomatoes
1½ cups beef stock
½ cup coconut milk (optional for a smoother finish)
2 tbsp lemon juice

Phaal Spice Blend
2 tbsp Kashmiri chili powder
1 tbsp cayenne pepper (add less for milder heat)
2 tsp ground cumin
2 tsp ground coriander
1 tsp turmeric
1 tsp garam masala
1 tsp smoked paprika
1 tsp black pepper
1 tsp salt
Basmati Rice
2 cups basmati rice
3 cups water
1 tsp salt
1 tbsp butter or ghee
2 cardamom pods (optional)
Warm Naan
4–6 naan breads
Butter or ghee for brushing

Instructions
1. Prepare the Beef ![]()
Pat beef dry and season lightly with salt.
Heat oil in a large heavy pot over medium-high heat.
Sear beef cubes in batches until deeply browned. Remove and set aside.

In the same pot, add onions and cook for 8–10 minutes until golden.
Add garlic, ginger, and fresh chilies. Cook for 1 minute.
Stir in tomato paste and cook until darkened.
