Tender chicken drumsticks braised in a savory soy-vinegar glaze with garlic and bay leaves. Served over white rice.
_ 8 chicken drumsticks
_ ½ cup soy sauce
_ ½ cup white vinegar
_ 1 head garlic (crushed)
_ 3 bay leaves
_ 1 tsp black peppercorns
_ 1 tbsp brown sugar
_ 1 cup water
_ 2 tbsp cooking oil
_ Cooked white rice (for serving)
_ Green onions (for garnish)
1_ In a glass bowl, combine the chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for 30 minutes.
2_ In a black skillet over medium-high heat, heat the oil. Sear the chicken until browned.
3_ Pour in the marinade and water. Bring to a boil.
4_ Reduce the heat to low, cover, and simmer for 30-35 minutes until the chicken is tender.
5_ Stir in the brown sugar and cook for 5 minutes until the sauce thickens.
6_ Serve over white rice and garnish with green onions.
