Ingredients

1. Make the Corn Fritters
- In a bowl, combine the flour, baking powder, garlic powder, salt, and pepper.
- Add the eggs and milk, mixing until smooth.
- Fold in the corn, green onions, and parsley.
2. Cook the Fritters
- Heat a little olive oil in a non-stick skillet over medium heat.
- Spoon about 2 tablespoons of batter into the pan for each fritter.
- Cook for 3–4 minutes per side until golden brown and cooked through.
- Transfer to a paper towel-lined plate.
3. Cook the Bacon
- Fry the bacon until crispy.
- Drain on paper towels.
4. Poach the Eggs
- Bring a pot of water to a gentle simmer.
- Add a splash of vinegar.
- Crack each egg into the water and cook for 3–4 minutes.
- Remove with a slotted spoon.
5. Assemble the Bowl
Arrange the corn fritters in a bowl with the avocado slices, crispy bacon, poached eggs, and a spoonful of fresh tomato salsa. Garnish with fresh basil leaves.
