Ingredients:
For the Dough:
- 500 g bread flour
- 350 g warm water (70% hydration)
- 100 g active sourdough starter
- 10 g salt

- Cheddar or mozzarella cheese
- Black olives
- Caramelized onions
- Jalapeños
- Sun-dried tomatoes
- Fresh rosemary or Italian herbs
- Roasted garlic
Instructions:
- Mix the warm water with the active sourdough starter until fully combined.
- Add the bread flour and mix until a shaggy dough forms. Let it rest for 30 minutes (autolyse).
- Add the salt and mix until incorporated.
- Perform 4–5 sets of stretch and folds, every 30 minutes.
- Let the dough bulk ferment until it has increased in size by about 50–70%.
- Divide and shape the dough into round loaves. Add your favorite fillings if desired.
- Place the loaves into proofing baskets and refrigerate for 8–16 hours for a cold proof.
- Preheat your oven with a Dutch oven inside to 250°C (480°F).
- Score the tops of the loaves with decorative patterns.
- Bake for 20 minutes with the lid on, then 20–25 minutes with the lid off until the crust is deep golden brown.
