Mongolian Beef Noodles

Ingredients:
8 ounces wide rice noodles
1 pound ground beef
1 tablespoon sesame oil
2 teaspoons garlic paste
1½ tablespoons ginger paste
1 teaspoon chili paste
½ teaspoon red pepper flakes, optional
½ cup soy sauce, light
¼ cup light brown sugar
2 tablespoons cornstarch
2 tablespoons vegetable oil
1 cup beef broth
2 green onions, thinly sliced
1 tablespoon sesame seeds, for garnish
Salt and pepper to taste

Instructions:
1. Cook rice noodles according to package directions. Drain and set aside.
2. In a small bowl, mix cornstarch with 2 tablespoons water to create a slurry.
3. Heat vegetable oil in a large skillet or wok over medium-high heat.
4. Add ground beef and cook until browned, breaking it apart with a spoon.
5. Drain excess fat from the skillet.
6. Add sesame oil, garlic paste, ginger paste, chili paste, and red pepper flakes (if using). Stir for 30 seconds until fragrant.
7. Pour in soy sauce and light brown sugar. Stir well to combine.
8. Add beef broth and bring to a simmer.
9. Stir in cornstarch slurry and cook until sauce thickens, about 2 minutes.
10. Add  cooked rice noodles to the skillet and toss to coat evenly in the sauce.
11. Cook for another 1-2 minutes until noodles are heated through.
12. Remove from heat and garnish with sliced green onions and sesame seeds.
13. Season with salt and pepper to taste.
