Sticky-Sweet Pineapple Jalapeño Chicken Rice Paper Wrap Rolls with Chili Sauce

Ingredients:
– 1½ cups cooked chicken, shredded
– 1 cup fresh pineapple, diced into small pieces
– 2 jalapeños, thinly sliced (seeds removed for less heat)
– 12-16 rice paper wrappers
– ¼ cup rice vinegar
– 2 tablespoons honey or brown sugar
– 1 tablespoon soy sauce
– 1 teaspoon fresh ginger, minced
– 2 cloves  garlic, minced
– ¼ cup water
– ½ cup fresh cilantro, chopped
– 2 tablespoons sesame seeds, toasted
– Lime wedges for serving

Instructions:
1. Prepare the chili sauce by combining rice vinegar, honey/brown sugar, soy sauce, ginger, garlic, and water in a small bowl. Whisk until well combined. Set aside.
2. In a medium bowl, combine the shredded chicken, diced pineapple, sliced jalapeños, and cilantro. Mix gently to combine.
3. Fill a shallow dish with warm water. Working with one wrapper at a time, dip it into the water for 5-10 seconds until pliable.
4. Place the softened wrapper on a clean, damp cutting board.
5. Place about 2 tablespoons of the chicken mixture in the center of the wrapper.
6. Fold the bottom edge of the wrapper up and over the filling, tucking it in.
7. Fold in the sides of the wrapper.
8. Continue rolling up the wrapper tightly, similar to a burrito.
9. Place the finished roll on a serving platter, seam-side down.
10. Repeat with remaining wrappers and filling.
11. Serve the rolls with the chili sauce for dipping and sprinkle with toasted sesame seeds.
12. Garnish with additional cilantro and serve with lime wedges.
