Steak with Creamy Mushroom Sauce, Crispy Potato Wedges & Garden Salad
Ingredients:
– 4 (8‑oz) ribeye or porterhouse steaks, 1½ inches thick
– 4 Tbsp unsalted butter
– 1 Tbsp olive oil
– 1 small yellow onion, finely diced
– 3 cups sliced cremini or button mushrooms
– 3 cloves garlic, minced
– 1 cup heavy cream
– ½ cup dry white wine (optional)
– 1 tsp fresh thyme leaves (or ½ tsp dried)
– ¼ cup grated Parmesan cheese
– Salt and freshly ground black pepper to taste
– 2 lbs russet potatoes, cut into wedges
– 2 Tbsp olive oil (for potatoes)
– 1 tsp smoked paprika
– ½ tsp garlic powder
– ½ tsp onion powder
– Salt and pepper, to taste
– 6 cups mixed salad greens (arugula, spinach, romaine)
– 1 cup cherry tomatoes, halved
– 1 cucumber, sliced
– ¼ red onion, thinly sliced
– 2 Tbsp extra‑virgin olive oil (for dressing)
– 1 Tbsp balsamic vinegar
– 1 tsp Dijon mustard
– 1 tsp honey or maple syrup
Instructions:
1. Prepare the potatoes: Preheat oven to 425°F (220°C). Toss wedges with 2 Tbsp olive oil, smoked paprika, garlic powder, onion powder, salt and pepper. Spread on a baking sheet in a single layer. Bake 35‑40 min, turning halfway, until golden and crisp.
2. Sauté vegetables: While potatoes roast, heat 2 Tbsp butter in a large skillet over medium heat. Add onions and mushrooms; cook 5‑6 min until softened. Add garlic and cook 30 sec.
3. Deglaze: Pour in wine, stir, and let reduce by half.
4. Make sauce: Stir in cream, thyme, and Parmesan. Simmer 3‑4 min until thickened. Season with salt and pepper. Set aside.
5. Cook the steaks: Pat steaks dry. Season generously with salt and pepper. In a separate skillet, heat 1 Tbsp olive oil over high heat. Sear steaks 3‑4 min per side for medium‑rare (adjust for desired doneness). Let rest 5 min. Slice against the grain.
6. Prepare the salad: In a large bowl, combine greens, tomatoes, cucumber and red onion. Whisk dressing ingredients until emulsified; drizzle over salad, toss gently.
7. Plate: Lay out lettuce, add sliced steak on top, spoon mushroom sauce over steak, arrange crispy wedges beside. Garnish with fresh herbs if desired.

Equipment:
– Oven
– Large skillet
– Baking sheet
– Medium saucepan (for sauce)
– Mixing bowl (salad)
– Whisk
– Cutting board & knife
Tips:
– Let steaks rest so juices redistribute.
– For extra crunch, toss wedges in shredded parmesan before baking.
– If liquid volume is too much, simmer sauce longer until desired thickness.
Variations:
– Protein swap: Use grilled chicken thighs or pork chops.
– Sauce tweak: Add a splash of demi‑glace or substituting half‑heavy cream with Greek yogurt for a tangy note.
– Vegetable upgrade: Roast carrots or brussels sprouts alongside wedges.
Serving Suggestions:
Serve with a chilled glass of dry pinot noir or a crisp white wine. Pair with a crusty baguette for dipping.
Storage:
– Leftover steak: refrigerate 3–4 days, reheat gently in oven at 350°F to preserve moisture.
– Mushroom sauce: store in sealed container for up to 3 days; reheat over low heat, whisking in a tablespoon of cream if it thickens.
– Potato wedges: keep warm in low oven or microwave (quick 30‑second burst) until crisp.
– Salad: keep greens separate; add dressing right before serving.
