Ingredients:
Meat Filling:
⅔ cup ground pork (150g)
1 tsp wood ear mushrooms, finely chopped (5g)
1 tbsp minced shallots (15g)
1 tbsp chopped green onion roots (5g)
1 tbsp fried onions (store-bought or homemade)
1 tbsp fish sauce (15ml)
1 tsp sugar (4g)
½ tsp ground black pepper (1g)
Dough:
1⅔ cups tapioca starch (200g)
½ cup warm water (120ml)
¼ tsp salt (1g)
Instructions:
1. Prepare the Dough: In a bowl, combine tapioca starch and salt. Gradually add warm water while mixing with chopsticks or a fork until a smooth, pliable dough forms. Knead for 2-3 minutes until elastic. If the dough is too sticky, add a little more tapioca starch; if it’s too dry, add a few drops of water.
2. Prepare the Filling: In a separate bowl, combine ground pork, chopped wood ear mushrooms, minced shallots, chopped green onion roots, fried onions, fish sauce, sugar, and ground black pepper. Mix well with your hands until all ingredients are evenly distributed.
3. Assemble the Dumplings: Divide the dough into 6 equal pieces. Roll each piece into a ball. Flatten each ball into a thin circle (about 3-4 inches in diameter). Place a spoonful of the meat filling in the center of each circle.
4. Seal the Dumplings: Fold the dough circle in half to form a half-moon shape. Pinch the edges firmly to seal, creating pleats along the curved edge. To make a more traditional dumpling, create a small indentation in the center and pinch the edges together to enclose the filling.
5. Cook the Dumplings: You can cook the dumplings in a pot of boiling water, steamed, or pan-fried.
Boiling: Bring a large pot of water to a boil. Gently drop the dumplings into the boiling water. Cook for 6-8 minutes, or until they float to the surface and the dough is translucent.
Steaming: Place dumplings in a bamboo steamer lined with parchment paper or cabbage leaves. Steam for 10-12 minutes, or until translucent.
Pan-Frying (Potstickers): Heat 1-2 tablespoons of oil in a non-stick pan over medium heat. Arrange the dumplings in the pan, flat side down. Cook for 2-3 minutes until the bottoms are golden brown. Add 1/2 cup of water to the pan, cover with a lid, and steam for 5-7 minutes, or until the water has evaporated and the dumplings are cooked through.
